• Gluten Free Last Minute Dessert: Chocolate Sea Salt, Goji Berry, & Pecan Bark

    I invited two new friends, Donald & Isabela Pelto, over for lunch today. We had gluten free, grain free pizza with an almond flour crust, topped with caramelized onions, sliced tomatoes, fresh basil, and vegan daiya cheese. I had blogged about a very similar crust a few years ago. And then fast forward, I found this recipe inspired by a friend of mine, Cara from www.carascravings.com.     And yes, the outside edges of the crust got burned because I turned away and didn’t pay attention for about 30 seconds while it was under the broiler, but my guests were very gracious and just cut the burnt crust away. Lesson learned: when you’re broiling something, don’t get involved in a side conversation!

    After lunch, Donald, one of my guests, asked if we could make something chocolate for dessert. Of course, mention the word chocolate and I’m all over it. I hunted through my refrigerator and found two half eaten dark chocolate bars and a bag of mini chocolate chips. One of the chocolate bars was gluten free and dairy free and the chips were the same; the label on the 2nd chocolate bar said that it might have trace amounts of dairy, but I didn’t fret. Though I’m 100% gluten free, I’m not quite as strict about dairy. I aim for as dairy free as possible, but sometimes a little bit sneaks in.

    I then went to town. We had homemade Dark Chocolate Sea Salt Goji Berry Pecan bark in about 25 minutes. Here’s the recipe:

    6 – 8 oz dark chocolate
    Sea salt flakes (I used Maldon sea salt flakes)
    goji berries
    pecans, roughly chopped

    Note: The amount of sea salt flakes, goji berries and pecans is rough, and really depends on how much you want to add to the finished chocolate bark.

    Melt the dark chocolate in a double boiler. Pour the melted chocolate on a flat baking pan covered with parchment paper. Use a spatula to spread the chocolate until it is your desired thickness. Sprinkle the sea salt, goji berries, and pecans over the melted chocolate. Put in the freezer for 15 minutes. Remove and break into serving pieces and try not to eat the entire chocolate bark in one sitting!
