• Gluten Free Cookbook Review: The Allergy Free Cook Bakes Bread

    Could buckwheat be gluten free? It seems counterintuitive. Who would think that anything with the word wheat in it would be gluten free? Drumroll: enter buckwheat.

    I recently had a VIP day with one of my gluten free health coaching clients. This is a day dedicated solely to my client, where we bake and cook all day, with the intention of helping the client return home with an arsenal of gluten free recipes that can easily be replicated in his or her kitchen.

    We talked about the fact that most gluten free all-purpose flour mixes, specifically the mixes that are made from what I call “the whites” (tapioca starch, white rice flour, potato starch, cornstarch, arrowroot, etc.) are pretty low on the nutrition ladder. That led to a discussion about buckwheat, one of the gluten free baking choices that is very high in vitamin B1 and B2 as well as the minerals potassium, magnesium, phosphate and iron. It’s known to reduce cholesterol, lower blood pressure and even does good things for your capillaries. And it has the potential to help manage type 2 diabetes. Go here for more info.

    Prior to working with my client on this particular VIP day, the only tortillas I made and loved were made using a mix by Breads From Anna. For healthy bread mix choices, Anna’s mixes are the way to go. When I wasn’t using Anna’s mix, I had made tortillas using either masa harina (corn) or white rice flour. And then, several days after my client returned home, I stumbled upon a recipe for buckwheat tortillas in a cookbook that I had on my shelf. The book is called in “The Allergy-Free Cook Bakes Bread” by Laurie Sadowski.

    Bingo! The recipe is easy, does not have a laundry list of ingredients, and freezes beautifully in a ziplock bag between sheets of wax paper. To defrost, run a tortilla under some hot water from your kitchen sink and then heat in a saute pan (cast iron works great).

    I haven’t made any of the other recipes in the book, but if the tortilla recipe is any indication, the rest of the book promises to be a total 100% winner. The recipes are gluten free, dairy free, and egg free, thus are completely vegan. I would not hesitate to recommend adding this cookbook to your bookshelf. Go for it!

    Thank you Laurie! I will correct the spelling mistake for sure. And yes, I have your other book and will do a review of it at some point. BTW, we are soul sisters. I, too, have a degree (Bachelor of Music) in music. We’ll have to talk and compare notes sometime, yes?!?
