• How To Make Homemade Almond Milk (gluten free, dairy free)

    This post is a result of showing my sister-in-law how to make gluten free, dairy free homemade almond milk and having her be amazed at how easy and delicious it was. I figured there would be others interested in making it from scratch, so I created this video.

    I’ve been making it homemade for a few years, but will admit that of late, I’ve been buying it at the grocery store. That is until recently. I discovered that all (at least all of the ones I’ve checked out) alternative milks have carrageenan in them. And it is a carcinogen.

    I don’t know about you, but I’m a pretty busy woman. The thought of making homemade almond milk on a regular basis (it’s my milk of choice)???? I might’ve said ” no way” but after learning this news about carrageenan, I’ll be making my almond milk from here on in.

    How To Make Homemade Almond Milk (gluten free, dairy free)


    • 1 c. raw almonds (preferably soaked overnight)
    • 4 c. water
    • 2 - 3 medjool dates
    • 2 tsp. agave syrup (or sweetener of choice)
    • 1 tsp vanilla extract
    • pinch sea salt


    Put all ingredients in blender and mix on highest speed.

    When all ingredients are blended, pour resulting milk into paint straining (or nut bag) bag.

    Using a squeezing and/or twisting motion, extract all of the milk from the bag until only the pulp is left.

    Chill the milk until ready to use.

    Note: You can buy nut bags on amazon, and paint straining bags at your local hardware store.

    Great job, Ellen! I still haven’t made my own almond milk. I just stopped buying it because of the carageenan (and other ton of ingredients) and have just been relying on coconut milk for dairy-free baking. How long does your almond milk keep after you make it?

    Shirley – I’ll consider this your official invitation to give it a try. It lasts about 3 – 4 days in my frig. By then, it’s gone!

    Oh My! lol
    You put alot of ‘sugar’ in your Almond Milk!
    I make A.M., same ratio 1-1.5cp Soaked Almonds to 4cp Water
    2 Medjool Dates [pitted]
    dash of Vanilla Powder
    pinch Sea Salt
    optional-[dash of Cinnamon and/or Nutmeg-fresh grated]

    I’ve never measured.. but 7cps from your video? How? *scrunchie face*

    Not sure, it just worked! 4 cups water plus the almonds and the resulting liquid from the almonds just made 7 cups. Happens every time! As for the sugar, I had to laugh aloud. I’m thrilled that it doesn’t seem like a lot of sugar to me, considering how many cups of milk I end up with!!! Love your idea of cinnamon and/or nutmeg – I’ll definitely try that next time!

    And if you make it without sweetener, you can use the leftover pulp as almond meal in baking, from what I understand.

    Tara – I would imagine that is true. I’ve never tried it, but it seems like such a sensible thing to do so as not to waste the pulp.

    Hi Garcinia….I used to participate in a Celiac listserve, but it’s been years. There are a few that are worth trying. Having the community is one way to get through the transition to being gluten free, so yes, definitely join one or more of them.

    Ellen, I LOVE this recipe and your video. I put off making almond milk for SO long. You’re delightfully playful way of teaching it lured me in- and I cannot buy store bought milk anymore! Nor do I want to. Me and my tummy thank you for it!!!!! So easy, so yummy, so so fun! xo

    Yay! So glad you’re making your own almond milk now. Truth-be-told, once in awhile I buy storebought – I found some Silk brand that doesn’t have carrageenan. But it’s still not nearly as delicious as homemade!
